Creamy & Spicy Miso Garlic Noodles

  • 6 cloves garlic diced
  • 2 tbsp miso (I use shiro miso, but you can use any kind of miso you like)
  • 2 tsp sesame seeds
  • 1 tsp red chili flakes
  • 1 tbsp neutral cooking oil
  • 2 tbsp scallions chopped
  • 4 oz noodles of your choice (I like to use these)
  • ¼ cup noodle water (you may not use all of it)


  • Start boiling water for the noodles.
  • Heat up oil in a pan on medium low heat.
  • Add in the garlic, sesame seeds, and red chili flakes to the pan.
  • Sauté on medium low heat until the garlic is translucent.
  • Set your noodles to cook.
  • Once the noodles are cooked, add them into the pan with your garlic mixture and make sure to set aside some noodle water.
  • Slowly mix in the noodle water with the miso paste until it forms a creamy sauce-like consistency.
  • Drizzle the miso sauce over the noodles, mix the sauce through thoroughly, top the noodles with scallions, and enjoy!


  • Miso is pretty salty so be careful when adding salt to your noodle water or to the finished dish. I generally don’t add any salt, however you can sprinkle a bit to finish if you’d like.
  • Make sure the noodle water isn’t boiling hot when you add it to the miso, you don’t want to boil your miso!
  • The red chili flakes get SPICY when sautéed on medium low heat so make sure to adjust accordingly if you have a low spice tolerance.
  • If you love spicy foods you can also add in some doubanjiang with the miso sauce for some more spice and depth!
