Creamy & Spicy Miso Garlic Noodles

Ingredients
  

  • 6 cloves garlic diced
  • 2 tbsp miso (I use shiro miso, but you can use any kind of miso you like)
  • 2 tsp sesame seeds
  • 1 tsp red chili flakes
  • 1 tbsp neutral cooking oil
  • 2 tbsp scallions chopped
  • 4 oz noodles of your choice (I like to use these)
  • ¼ cup noodle water (you may not use all of it)

Method
 

  1. Start boiling water for the noodles.
  2. Heat up oil in a pan on medium low heat.
  3. Add in the garlic, sesame seeds, and red chili flakes to the pan.
  4. Sauté on medium low heat until the garlic is translucent.
  5. Set your noodles to cook.
  6. Once the noodles are cooked, add them into the pan with your garlic mixture and make sure to set aside some noodle water.
  7. Slowly mix in the noodle water with the miso paste until it forms a creamy sauce-like consistency.
  8. Drizzle the miso sauce over the noodles, mix the sauce through thoroughly, top the noodles with scallions, and enjoy!

Notes

  • Miso is pretty salty so be careful when adding salt to your noodle water or to the finished dish. I generally don’t add any salt, however you can sprinkle a bit to finish if you’d like.
  • Make sure the noodle water isn’t boiling hot when you add it to the miso, you don’t want to boil your miso!
  • The red chili flakes get SPICY when sautéed on medium low heat so make sure to adjust accordingly if you have a low spice tolerance.
  • If you love spicy foods you can also add in some doubanjiang with the miso sauce for some more spice and depth!
