Method
- Start boiling water for the noodles.
- Heat up oil in a pan on medium low heat.
- Add in the garlic, sesame seeds, and red chili flakes to the pan.
- Sauté on medium low heat until the garlic is translucent.
- Set your noodles to cook.
- Once the noodles are cooked, add them into the pan with your garlic mixture and make sure to set aside some noodle water.
- Slowly mix in the noodle water with the miso paste until it forms a creamy sauce-like consistency.
- Drizzle the miso sauce over the noodles, mix the sauce through thoroughly, top the noodles with scallions, and enjoy!
Notes
- Miso is pretty salty so be careful when adding salt to your noodle water or to the finished dish. I generally don’t add any salt, however you can sprinkle a bit to finish if you’d like.
- Make sure the noodle water isn’t boiling hot when you add it to the miso, you don’t want to boil your miso!
- The red chili flakes get SPICY when sautéed on medium low heat so make sure to adjust accordingly if you have a low spice tolerance.
- If you love spicy foods you can also add in some doubanjiang with the miso sauce for some more spice and depth!
